The longer roasting time brings the beans to a higher temperature, typically past the second crack, which caramelizes the sugars and develops strong notes of chocolate, roasted nuts, and even hints of spice or burnt sugar. As a result of this process, the coffee’s natural acidity is significantly diminished, creating a smoother and heavier-bodied cup with a bittersweet finish. Dark roast coffee tends to have less of the original bean’s nuanced flavours but offers a consistent, rich taste that appeals to those who enjoy a more intense coffee experience.

  • Low acidity due to the longer roasting process, which breaks down the acidic compounds found in the beans. This results in a smoother, more mellow flavour profile with reduced sharpness.
